The Real McCoy Rum Founder, Bailey Pryor, discusses the process of distillation using two different types of Stills – a copper pot still and a twin-column Coffey still, which make heavy and light flavor profile rum, respectively. This is a traditional Barbados process which includes no added sweeteners or flavorings. During this stage, the alcohol vapor raising inside the still will interact with the copper walls of the still, neutralizing sulfur compounds and converting acidic compounds to basic compounds, making the spirit smooth.
