The term “Blending” has different meanings in different parts of the world. In some instances, rum producers blend rum from different sources, or rum of different ages. In the case of traditional Barbados rum, like The Real McCoy, Founder and CEO, Bailey Pryor, explains that his rum is a blend of rums from one estate, Foursquare Distillery, who uses two different stills – a copper pot still and a twin-column Coffey still, which produce a heavy flavor profile rum and a light flavor profile, respectively. Once the perfect balance of heavy and light rum have been created, the rum is blended with pure Barbados spring water to reduce the ABV (Alcohol by Volume) to bottling strength which is typically 40% ABV or 80 Proof.
